I'm always in the mood for something sweet, this Strawberry Shakeology Mug Cake is a life saver! Not only doe it have 25 grams of protein, it is loaded with over 70 super foods! It curbs my sweet tooth and I don't have to feel all that guilty about eating it :)
Please note the following before commenting or reading the RECIPE below......
1. I know the Shakeology nutrients are diminished when heated.
2. I do not advocate eating mug cakes daily nor microwave foods be a regular part of your diet.
3. I do not eat perfectly all the time and sometimes it is nice to have a treat.
MUG CAKE RECIPE:
1/2 cup oat flour
1/2 scoop strawberry Shakeology
1 whole egg or 3 liquid egg whites
2 T nonfat plain Greek yogurt
1 oz. unsweetened vanilla almond milk
1/2 tsp baking powder
Add sweetener of your choice ( I used a packet of Stevia)!!
Mix all the ingredients together and pour into a large microwave safe mug. Use cooking spray (or whatever non stick method you prefer). Microwave for 1 minute...then an additional 10 seconds if the center is still gooey. DO NOT OVERCOOK.
The "frosting" is plain Greek yogurt sweetened with stevia.
