This Warmed Egg, Bacon and Arugula Salad is the perfect winter salad, why? Because the toppings are actually warm and rich leaving you satisfied and your cravings for something hot and savory curbed. If you are having this salad on the go or at work, you an easily heat the bacon and onions in the microwave and pack the cold ingredients separately.
Assembling this salad really doesn't take much time and is well worth the little effort.
To make the salad you will need:
-2 Cups of arugula
-2 strips of bacon (I used uncured turkey bacon)
-1/4 cup yellow onion sliced thin
-2 hard boiled eggs
Fry the onions and the bacon in a skillet until the onions are caramelized and the bacon is crispy. Place the 2 cups of arugula on a plate and slice the hard boiled eggs over the top. Chop the bacon and add the onions and bacon to the top of your salad. Dress your salad with 2 TBSP of the creamy mustard vinaigrette (recipe below).
This recipe for the Creamy Mustard Vinaigrette makes multiple servings and can be kept in the refrigerator for up to a week.
To make the Dressing you will need:
-1 garlic clove minced
-1 TBSP Dijon mustard
-1/2 tsp sea salt
-2 TBSP red wine vinegar
-1/2 cup olive oil
-1 TBSP honey
Whisk all the ingredients together in a bowl and serve immediately or place in a covered container in the refrigerator for later use.
