SWEET POTATO MUFFINS
I LOVE sweet potatoes and the health benefits are outstanding. Here are 9 reasons why you might want to add them into your diet:
Below is a recipe I created whi:
1 cup spelt flour
3/4 cup whole wheat flour
1 teaspoon baking soda
1/2 tsp ground cinnamon
1/2 tsp ground nutmeg
1/4 tsp sea salt
1/2 cup sucanat
1/2 cup brown sugar, firmly packed
1/2 cup natural or organic apple sauce
2 1/4 cup steamed sweet potatoes, mashed
Preheat oven to 350 F and grease two muffin tins (makes 12 muffins)
Combine 1 3/4 cup flour, cinnamon, nutmeg, and salt in a large bowl.
In another bowl combine eggs, sucant, brown sugar, apple sauce and sweet potatoes. Beat at a medium speed until blended.
Make a well in the center of the dry ingredients, add the wet ingredients into the well and stir until just until moistened.
Fill muffin tins 3/4 of the way full and bake for 27-30 minutes
Remove pans and cool muffins on a wire rack
Alternatively, fill mini muffin (48) tins and bake for 12 - 14 minutes.
