The flavors within this salad are unmatched and I feel as if I am eating a gourmet meal every time I have it. The blend of sweet, tangy and savory all come together nicely and it is such a lovely salad with lots of color!
I love that I can whip up a big batch of this salad dressing and either serve it for a gathering (4-6 people) or keep it stored in the refrigerator for single serving salads for myself. The dressing will keep for 2-3 weeks in the refrigerator and needs to be brought to room temperature for 10-15 minutes prior to serving.
1/3 cup olive oil
1/4 cup apple cider vinegar
1 shallot minced
2 tsp brown mustard
sea salt and pepper to taste
Whisk all ingredients together and toss with salad
For the Salad:
2 bunches baby arugula, rinsed and dried
1/2 pound radishes, thinly sliced
1 red apple, cored and finely diced
1/2 cup blue cheese (feta is another great option)
