I made this Salad while in Florida with my girlfriends. Reminiscing
about our fun trip over lunch with the with The San Marco Salad :)
1 shallots, minced (about 2
1/4 cup cider vinegar
2 tsp whole grain mustard
Fresh ground black pepper
1/3 cup extra virgin olive oil
1/2 lb radishes - sliced thinly
1 red apple, cored and diced
2 large bunches of arugula
4 ounces) Blue Cheese, crumbled
Make the dressing: Place shallots and pepper in mixing bowl.
Add vinegar and mustard. Mix. Slowly whisk in olive oil. Set aside.
Make the salad: Toss radish slices, apples and arugula in salad bowl. Pour
desired amount of dressing over and toss. Sprinkle Blue over. Serve
