Do yourself a favor and feed your body well. Enjoying pancakes doesn't have to be seen as a chore, or long laborious process, following this recipe is really quite simple and takes very little time. With 27g of protein and only 7g of sugar these flour-less pancakes are just the boost your body will need to help keep you energized all morning.
- 1/2 cup dry rolled oats (cooked and cooled)
-1 egg or 2 -3 egg whites
-1 tsp vanilla
-1 scoop vanilla Shakeology (chocolate works too) - or your favorite protein powder
-1/4 tsp baking soda
-1/4 tsp baking powder
- coconut oil (enough to grease the bottom of your skillet)
Cook oatmeal and set aside to cool. Mix together all ingredients except coconut oil. Heat coconut oil in a skillet on medium heat. Drop large spoonfuls of the batter into the heated skillet. Your pancakes will be ready to turn once the bubbles in the batter stop popping. Top with a little pure maple syrup and enjoy!
