Chia seeds are a known super food and are rich in omega-3 fatty acids, fiber, antioxidants and minerals (just to name a few). Chia seeds also create a nice gelatinous texture when mixed with liquid and given time to "puff". Which is exactly what happened here with this EASY coconut chia seed pudding. There are only 2 ingredients you really need to make this tasty treat.
2 cups coconut milk
1/3 cup chia seeds
(cinnamon and stevia to taste are optional)
Combine chia seeds and coconut milk in a large glass bowl. Mix well and seal well. Refigerate over nihgt and serve! Add a dash of cinnamon and/or a pinch of stevia and you have yourself a delicious, healthy, superfood treat!
