I have been thinking ahead for days I do not feel well or for when the baby does make it's debut. I am quite the planner at heart. so freezer meals are right up my alley. Not all are created equal though and provide my family with the nutrition they deserve. This crockpot chicken fajita recipe is loaded with fresh vegetables and protein, is free from the usual MSG, preservatives and sugar found in store bought seasoning packets, which other recipes typically use.
Today I prepped 2 freezer meals in under 10 minutes, that's it! Two meals in 10 minutes that I can toss into the crockpot at a moments notice and have a fresh, homemade dinner that not only tastes great but is good for us too!
Here is what you will need to make your own Crockpot Chicken Fajita Freezer Meal:
(Makes one meal/freezer bag which serves 4-5)
-1 lb chicken breast
-2 bell peppers (any color), sliced
-1 medium yellow or red onion sliced
-2 cloves garlic minced
-3/4 cup chicken broth
-2-3 TBSP Seasoning Mix (See recipe below)
- 4 tsp chili powder
- 2 tsp paprika
- 2 tsp sea salt
- 2 tsp cumin
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp dried oregano
- 1/2 tsp dried cilantro
Mix all the ingredients together and store leftovers in an air tight container.
