Since these spring rolls tend to be a bit mild in flavor and the rice wraps make for easy eating, toddlers and children of all ages find them fascinating and oh so tasty! My son can easily gobble down one spring roll as a side to his lunch, and the best part is he is getting in a full serving of vegetables. Yay!!
To make your own spring rolls at home you will need the following ingredients:
-romaine lettuce (about 4 leaves)
- 1/2 avocado
-1/2 seedless cucumber
- 4 rice spring roll wraps (I have found these in the ethnic food isles at many different grocery stores)
AND the following kitchen tools:
-large mixing bowl
-julienne slicer (or vegetable peeler)
Start by preparing all your vegetables. Julienne the carrots and cucumbers and place them on a plate for assembly. On the same plate place your 4 leaves of romaine lettuce ( I like to cut min into smaller pieces) and 1/2 avocado sliced. Then fill your large mixing bowl with enough warm water to fully submerge your rice wrap. The wrap will begin to soften and will be ready to use in about 1-2 minutes. Remove the wrap from the water and place it on a large plate. load the wrap with 1/4 of your vegetables and begin to roll from one side, folding in the edges as you roll (like you would a burrito). Repeat this step 3 more times and voila!
For a little added flavor I like to dip my spring rolls in some sweet red thai chili sauce (YUM!)
