This recipe is always a crowd pleaser, and the best part is that it can be preped the night before and placed into the oven when you wake up in the morning and 25 minutes later you have a hot, delicious and healthy breakfast. Even if you are not a typical oatmeal fan, this is one recipe you have to try. It's slightly sweet and by baking it you eliminate that sticky oatmeal texture. Top it with your favorite fresh or dried fruit, milk, yogurt, or nuts.
-2/3 cup coconut oil
-1 cup sucanat or 2 ¼ TBSP Truvia
-2 eggs or 3 egg
-4 cups old fashioned oats
-3 tsp baking powder
-1/2 tsp sea salt
-1 ½ cups skim milk
-1tsp vanilla extract
mix well and cover. Place in the refrigerator overnight. In the morning place the mixture in a greased pan.
