One of the clients in our monthly health and fitness accountability group shared this recipe for avocado egg salad and I just had to try it... Boy was I glad I did!! It was so yummy!
Here's the recipe if you want to try it yourself:
✔️1 egg chopped
✔️2 egg whites chopped
✔️ 1/4-1/2 ripe avocado mashed
✔️1 tsp Dijon mustard
✔️sea salt and pepper to taste
Mix and serve on your favorite whole grain or gluten free bread or choose to place it atop 2 cups salad greens 🌱🌿
