These brownies can easily be made gluten free and are great for those with other allergies such as nuts and dairy. They are so chocolaty and rich too, it is easy to stop at one!! (Which is never an easy thing to do)
- 2 Cups finely shredded zucchini (I squeezed out some of the liquid and firmly packed it into the measuring cup)
- 3/4 cup brown sugar
- 1 1/3 cup unsweetened natural or organic applesauce
- 2 eggs
- 2/3 cup unbleached flour (GF oat flour also works well!)
- 3/4 cup unsweetened coco powder
- 2 tsp baking soda
- 1 1/2 tsp baking powder
- 1/2 tsp cinnamon
- 1/2 tsp sea salt
Optional add ins include: 1/2 cup chocolate chips or nuts of your choice. Keep in mind this will raise the calorie count.
Grease a 9" x 13" baking pan with olive or coconut oil and preheat oven to 350 F.
Shred the zucchini and mix together in a large bowl with sugar, applesauce, eggs and vanilla. In a separate bowl, mix the remaining dry ingredients. Combine the dry ingredients with the wet ingredients and add any additional add ons at this time. Pour the batter into the baking pan and bake for 55 minutes.
Frost with the frosting if desired.
For the Frosting:
-1/2 cups dark chocolate chips (use dairy free if needed)
-1/2 cup natural butterscotch chips
-1/2 cup natural peanut butter
Melt all ingredients together and spread atop cooled brownies.
