Yes, I know, another banana pancake recipe! But I'm always up for trying a recipe and my friend sent this one to me last night, so naturally I had to give it a whirl this morning. WOW! Am I glad I did. Not only was it so easy (my son helped mash the bananas too), but they taste great It seems like this would be a recipe I could make any time since I tend to have all 4 of these ingredients in my house at any given moment. Here it is! I hope you enjoy it as much as I do and thank you Lindsey (yes, my friend has the same name and spelling as I do) for the recipe.
2 egg whites
1 ripe banana mashed well
dash of cinnamon to taste
splash of vanilla to taste.
Pour batter into heated nonstick pan (or slightly greased with olive or coconut oil).
Cook on medium heat, about 1-2 minutes per side.
Serve with pure maple syrup or eat plain!
